2 tablespoons vegetable oil

1 small onion chopped

1 pound ground beef (or 4 chicken breasts diced, or exclude the meat for a vegetarian version)

1 teaspoon garlic powder

1 teaspoon black pepper

2 teaspoons salt

1/2 cup milk

2 cups grated cheddar cheese

5 cups tortilla chips

1 medium tomato chopped

1/3 cup sliced green onion (scallion)

1/3 cup sliced pitted ripe olives

1 jalapeno pepper sliced (if you want it very spicy)

1/2 cup chunky salsa




Heat the oven to 400F degrees.


In a large skillet heat the oil over low-medium heat. Add the onion and cook for 2 minutes. Then add the beef (or chicken), garlic, black pepper and salt. Stir often to separate the meat and cook until the meat is browned.


In a large saucepan over medium heat cook the milk and 1 cup of cheese, stirring constantly until the cheese is melted. Remove from heat. Add half of the cooked meat to the saucepan and stir.


In a baking dish place half of the chips. Sprinkle the tomato, scallion, olives and jalapeno pepper. Over the chips add the plain meat and pour the salsa over the meat. Sprinkle 1 cup of cheese.


Layer the remaining chips on top and add the meat and cheese mixture.


Place the dish in the oven and bake for 10 minutes, or until the cheese is melted. Serve immediately.
