Spinach Balls

 

A delicious and healthy take on a great party appetizer. Have you served this dish as an appetizer?  Has this dish been a hit or miss for you?

 

SERVINGS: 20 to 30 balls

 

INGREDIENTS:

20 oz of chopped spinach

4 eggs ½ large onion diced

1 box herb stuffing mix

¾ stick butter

½ cup parmesan cheese

Salt, pepper and garlic powder to taste

 

INSTRUCTIONS:

 

Saute the butter and onion in large skillet until onions are limp (not brown). In large bowl combine all ingredients including the cooked onions. Cover the bowl and refrigerate for about 2 hours.

 

Heat oven to 375 degrees.

 

Make 2 inch balls of the spinach mixture and place on baking sheet. Place cookie sheet in oven and bake for about 15 minutes until slightly brown. Serve warm.
