Albondigas in Spicy Tomato Sauce

Albondigas is the Spanish term for meatballs. This is a great dish, and kid friendly. Serve with white rice, and you have a complete meal that everyone at the table will love.

 

SERVES: 4

 

INGREDIENTS:

1 pound ground beef

1/4 cup saltine cracker crumbs

1 large egg, slightly beaten

2 tablespoons chopped fresh cilantro

2 tablespoons water

1 can tomato sauce

2 tablespoons chopped chipotle peppers in adobo sauce

Hot cooked rice

Chopped fresh cilantro (optional)

 

INSTRUCTIONS:

 

Mix lightly ground beef, cracker crumbs, egg, 2 tablespoons cilantro and water in large bowl.

 

Shape 12 equal portions of beef mixture into meatballs.

 

Set aside.

 

Combine tomato sauce and peppers in pot; bring to a boil.

 

Add meatballs.

 

Reduce heat; cover and simmer for 14 to 16 minutes.

 

Stir halfway through cooking time to cover meatballs with sauce.
