Beef Lasagna

 

SERVES: 4

 

INGREDIENTS:

1 tablespoon vegetable oil

1 clove of garlic, crushed

1 small onion, diced

1 pound ground beef salt and pepper, to taste

1 jar favorite spaghetti sauce

9 lasagna noodles, boiled and drained (undercooked)

1/4 cup green olives. sliced, with pits removed

4 cups shredded mozzarella cheese

1/2 cup grated Parmesan

1/2 teaspoon thyme

1/2 tsp. oregano

1/2 tsp. basil

1 tsp. parsley

1 tsp. sugar (do not use if sauce is sweet)

 

INSTRUCTIONS:

 

In a skillet, heat the oil. Over medium-low heat, cook the onion and garlic for 2 minutes. Add the beef, salt, and pepper. Cook the beef until browned. Lower the heat. Add spaghetti sauce (reserve 1/2 cup), olives, thyme, oregano, basil, parsley and sugar. Simmer for 30 minutes.

 

Spread 1/2 cup of sauce on the bottom of a 13 x 9 x 2-inch baking dish. Place 3 lasagna noodles on top of the sauce. Next, layer 1/3 of the mozzarella. Add 1/2 of the meat sauce. Sprinkle Parmesan cheese. Repeat to make 1 more layer.

 

Add the remaining noodles, mozzarella and Parmesan cheeses.

 

Cover the baking dish with foil. Bake for 20 minutes. Uncover and bake for 15 minutes or until the lasagna is hot and bubbling and the cheese is melted. Remove the lasagna from the oven. Let the lasagna stand 10 minutes before cutting.

 

Serve with crusty bread or garlic bread.
