Meatloaf with Mushroom Sauce

SERVES: 6


INGREDIENTS:

1 pound ground beef

1 pound ground pork

1 pound ground veal

1/2 cup chopped onion

1/2 cup dry bread crumbs

1/2 cup milk

2 eggs, beaten

1/2 cup ketchup

1 tablespoon Worcestershire sauce

2 teaspoons Dijon mustard

salt, to taste

freshly ground black pepper, to taste

 

Sauce

 

2 tablespoons diced onion

8 ounces sliced mushrooms

1 tablespoon vegetable oil

1 tablespoon flour

2 cups beef broth

 

INSTRUCTIONS:

 

In a large bowl use your hands to mix the 3 meats, onion, bread crumbs, milk, eggs, ketchup, Worcestershire sauce, mustard, salt and pepper. Place the mixture into a 13 x 9 x 2-inch baking pan and firmly shape into a loaf. Place the baking pan in the oven and set to 400F degrees.

 

Bake for 1 hour or until the meatloaf is cooked through. Let the meatloaf rest for 10 minutes.

 

While the meatloaf is resting, sauté the diced onions and mushrooms in oil in a large skillet for 3 to 5 minutes until tender. Stir in the flour and broth. Add salt and pepper, to taste. Simmer for 10 minutes.

 

Serve each slice of meatloaf with the mushroom sauce on top.
