Banana Muffins

 

SERVES: 12 muffins

 

INGREDIENTS:

2 cups all-purpose flour

1/4 cup sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 cup milk

1 egg, beaten

1/3 cup vegetable oil

3/4 cup mashed ripe bananas

1/2 cup walnuts, chopped into small pieces

 

INSTRUCTIONS: 

 

Heat oven to 400F degrees. Grease the 12 cups of a muffin pan. In a large bowl stir together the flour, sugar, salt, and baking powder. In a separate bowl beat the milk, egg, oil, bananas and walnuts. Add this mixture to the bowl with the dry ingredients.

 

Mix the ingredients for about 10 seconds until blended. Do not over mix. The mixture will not be smooth. Evenly spoon the mixture into each of the 12 cups of the muffin pan. Bake for about 15 minutes until a tooth pick inserted into the middle of a muffin comes out clean.

 

Allow them to cool then serve. Makes about 12 muffins.

 

I secretly love to lightly spread peanut butter on top of the muffin. Enjoy!
