Banana Nut Bread II

SERVES: 6

 

INGREDIENTS:

1 3/4 cups all-purpose flour

3/4 cup white sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup walnuts, coarsely chopped (optional)

3 ripe large bananas, mashed well

2 eggs, beaten

1/2 cup unsalted butter, melted

1 teaspoon pure vanilla extract

 

INSTRUCTIONS:

 

Preheat oven to 350F degrees. Butter and flour a loaf pan.

 

In a bowl combine the flour, sugar, baking powder, salt, baking soda, cinnamon, and nuts.

 

In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. Add this mixture to the flour mixture.

 

Stir with a rubber spatula or wooden spoon. It will not be smooth. Don’t over mix. Pour the mixture into the loaf pan.

 

Bake for abut 1 hour, until the bread is golden brown and a toothpick inserted in the center comes out cleans. Place on a wire rack to cool and then remove the bread from the pan. Slice to serve. Serve warm or at room temperature.
