Country Buttermilk Biscuits

SERVES: 10 biscuits

 

INGREDIENTS:

1 teaspoon salt

1/4 teaspoon baking soda

2 cups all-purpose flour

2 1/2 teaspoons baking powder

2 tablespoons butter, chilled

1/4 cup vegetable shortening, chilled

3/4 cup buttermilk

 

INSTRUCTIONS:

 

Heat oven to 450F degrees.

 

In a large bowl mix the salt, baking soda, flour and baking powder. Add the shortening and butter by cutting them with a knife while mixing them into the flour. The shortening and butter should be cut into dime size pieces.

 

Add the buttermilk, and mix the ingredients with a wooden spoon until just blended.

 

Spread flour over a surface then place the dough on it and begin kneading. Knead for about 2 minutes until the dough is smooth. Then spread out the dough to form a circle that’s a 1/2-inch thick. Cut out a circle of dough about 3 inches round with a knife or a biscuit cutter. Place it on an ungreased baking sheet. Make sure the circles of dough do not touch each other.

 

Place the sheet on the center rack in the oven and bake for 10 to 12 minutes until tops are golden brown.

 

Buttermilk biscuits are great are their own. You can also serve them split open with both sides buttered and as part of a bigger breakfast.

 

Serve immediately.
