SERVES: 6

 

INGREDIENTS:

3/4 cup all-purpose flour

1 teaspoon salt

2 cups cornmeal

3 teaspoons baking powder

1 tablespoon sugar

2 large eggs

1 1/2 cups milk

5 tablespoons butter, melted

 

INSTRUCTIONS:

 

Grease a 9-inch square baking pan.

 

Heat oven to 400F degrees.

 

In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar.

 

In another bowl, mix together the milk, eggs, and butter.

 

Pour the milk mixture into the bowl that has the cornmeal.

 

Stir until well blended.

 

Pour the mixture into the baking pan.

 

Bake for 25 minutes, or until a toothpick comes out clean when inserted in the center.
