Whole Wheat Blueberry Muffins

The fresher the blueberries, the more flavorful this dish will come out. Healthy and delicious.

 

SERVES: 12

 

INGREDIENTS:

 

Muffins

1 3/4 cups whole-wheat pastry flour

1/2 cup sugar

2 teaspoons baking powder

3/4 teaspoon salt

1 teaspoon grated lemon zest

1 large egg

1/2 cup whole milk

5 tablespoons unsalted butter melted

1 1/2 cups blueberries (about 7 ounces)

 

Topping

 

1 teaspoon sugar

1/4 teaspoon cinnamon

 

 

INSTRUCTIONS:

 

Preheat oven to 375°F. Butter muffin pan.

 

Mix flour, sugar, baking powder, and salt in a large bowl.

 

Add and mix lemon zest.

 

Whisk egg in another bowl, add milk and butter. Whisk together.

 

Add to dry ingredients and stir until mixed together thoroughly (batter will be dense).

 

Add blueberries.

 

Divide batter among muffin cups.

 

In a small bowl, mix together sugar and cinnamon topping, sitr.

 

Sprinkle over batter in cups. Bake for 20 minutes.

 

Cool for about 5 minutes, remove from pan. Serve warm or at room temperature.
