Crepes Suzette

SERVES: 6

 

INGREDIENTS:

3/4 cup of milk

1 cup of pancake mix

2 eggs

2 tablespoons of butter

1 teaspoon grated orange peel

1/3 cup of sugar

1/4 cup orange juice

3 tablespoons of butter

1/4 cup orange flavored liqueur like Grand Marnier

 

INSTRUCTIONS:

 

In a large bowl beat the milk, pancake mix, and eggs with a fork or whisk until blended.

 

In a large skillet melt 2 tablespoons of butter over medium heat.

 

Add 2 tablespoons of the batter to the skillet and rotate the skillet to cover the bottom with the mixture. Cook for about 2 minutes then flip and turn over. Cook the other side for 2 minutes then move to a warm plate. Repeat for each crepe until the batter is finished.

 

In a large skillet melt 3 tablespoons of butter over medium heat. Add the orange peel, orange juice and sugar. Stir occasionally and bring to a boil. Reduce the heat and let it cook for 5 minutes.

 

Heat the liqueur in a saucepan but do not boil.

 

Fold the crepes into fourths and place in the skillet at the edge. Then pour the liqueur into the middle of the skillet.

 

Carefully ignite the liqueur. Some people find it easier to light a match and drop the match into the skillet. Others like to move the skillet to the edge of the burner and slightly dip the skillet so the flame from the burner jumps into the skillet and ignites the liqueur.

 

After the liqueur has burned off and the flame is gone, remove the skillet from heat. Place 2 crepes on each dessert plate and pout some warm sauce onto the crepes. Serve immediately.
