Eggs Benedict

 

SERVES: 3

 

INGREDIENTS:

6 poached eggs 

Hollandaise Sauce

6 slices of Canadian bacon, or ham, cut to size of English muffin

6 bottom slices of English muffins

2 tablespoons of butter, softened

 

INSTRUCTIONS:

 

In a skillet at medium heat, heat some butter. Then add the Canadian bacon, or ham, and cook for 5 minutes on each side until lightly browned.

 

Toast the English muffins and lightly butter them. Top them with the bacon or ham, then the poached egg. Use a spoon to drizzle the hollandaise sauce over the eggs. Serve immediately.
