Eggs Florentine

 

SERVES: 3

 

INGREDIENTS:

6 poached eggs

Hollandaise Sauce

1/2 pound of spinach

6 bottom slices of English muffins

2 tablespoons of butter, softened

 

INSTRUCTIONS:

 

In a skillet at medium heat, heat some butter. Then add the spinach and sauté until the leaves become wilted.

 

Toast the English muffins and lightly butter them. Top them with the spinach, then the poached egg. Use a spoon to drizzle the hollandaise sauce over the eggs. Serve immediately.
