Hollandaise Sauce

SERVES: 6

 

INGREDIENTS:

3 egg yolks, at room temperature

1 tablespoon lemon juice, at room temperature

1 tablespoon cream, at room temperature

1/2 cup melted sweet butter, hot but not burnt

Dash of hot pepper sauce or cayenne pepper

 

INSTRUCTIONS:

 

In a blender, or a bowl with an electric mixer, combine the yolks, cream, lemon juice and spicy sauce. Mix well.

 

Then slowly add the hot butter and mix on high. The sauce will thicken. It’s ready to be served.
