Home Fries or Home Fried Potatoes

SERVES: 4

 

INGREDIENTS:

3 tablespoons butter

1 large onion, peeled and chopped

2 cloves of garlic, peeled and crushed

1 red bell pepper, cut into 1 inch cubes

1 green bell pepper, cut into 1 inch cubes

1/2 teaspoon salt

1/4 teaspoon black pepper

4 large red potatoes cut into 1 inch cubes

 

INSTRUCTIONS:

 

In a skillet at medium-low heat, melt the butter. Add the garlic and onions and cook for 2 minutes.

 

Stir in the bell peppers and cook for another 2 minutes. Add the salt, pepper and potatoes and continue to stir and cook for 15 minutes until the potatoes are tender but a little firm. Serve immediately.
