Some serve this dish with a sde of salsa and/or sour cream. I am a huge sour cream lover, so that is usually my choice.

 

What is yours?

 

SERVES: 1

 

INGREDIENTS:

2 eggs

3 tablespoons milk

Salt and pepper to taste

3 tablespoons butter

1 medium potato diced

3 tablespoons diced ham

3 tablespoons diced tomato

 

INSTRUCTIONS: 

 

In a bowl, whisk the eggs, salt, pepper and milk, until fluffy. Heat a skillet over medium-low heat. Add the butter.

 

When the butter starts to sizzle pour in the diced potato and cook until soft. Add the ham, tomato and whipped eggs.

 

Let the eggs cook fully but not brown. Then serve.
