Spinach, Cheese and Bacon Frittata

 

SERVES: 4

 

INGREDIENTS:

1/2 cup crumbled cooked bacon

8 eggs

1/2 cup milk

Salt and pepper to taste

1/2 pound spinach, cut into 1 inch pieces

1/2 onion, diced

3 tablespoons butter

1 cup shredded cheddar cheese

 

INSTRUCTIONS:

 

In a bowl, whisk the eggs, salt, pepper and milk, until fluffy. Heat oven to 450F degrees. Use a skillet that is safe for both stovetop and oven. On the stove heat the skillet over medium-low heat.

 

Add the butter. When the butter starts to sizzle add the onions and sauté for 2 minutes. Add the spinach. Stir for 1 minute until the spinach leaves are wilted.

 

Add the egg mixture and bacon and stir for a few seconds. Then let it cook until the eggs begin to set. Turn off the heat.

 

Sprinkle the cheese over the eggs. Move the skillet to the oven and bake for 10 minutes until eggs are fully cooked.

 

Cut into 4 pieces and serve.
