Spinach

SERVES: 4

 

INGREDIENTS:

Salt and pepper to taste

1/2 pound spinach, cut into 1 inch pieces

1/2 onion, diced (optional)

3 tablespoons butter

 

INSTRUCTIONS:

 

On the stove heat a large skillet over medium-low heat. Add the butter.

 

When the butter starts to sizzle add the onion (optional) and sauté for 2 minutes.

 

Then add the salt, pepper and spinach and sauté for about 2 minutes until the spinach leaves are wilted.

 

This dish is great served by itself or as part of a bigger meal.
