Steak and Eggs

 

SERVES: 4

 

INGREDIENTS:

8 eggs

2 tablespoons butter, not salted

1 tablespoon vegetable oil

Salt and pepper, to taste

1-pound sirloin steak (about 1 inch thick)

 

INSTRUCTIONS:

 

Heat oven to 350F degrees. Season the steak with salt and pepper. Use a skillet that is safe for both stovetop and oven. On the stove heat the skillet over medium-high heat. Add the oil.

 

When the oil starts to sizzle place the steak in the skillet and cook for 3 to 4 minutes on each side, until brown. Move the skillet to the oven and cook the steak for 5 minutes for medium-rare, or 10 minutes for well done. Then move the skillet to the stovetop, without heat, and let it rest while you prepare the eggs.

 

Heat a skillet over medium-low heat. Add the butter. When the butter starts to sizzle crack the eggs and add them to the skillet. If the skillet is large it might hold 4 eggs. You can use 2 skillets at the same time so that all 8 eggs will be ready at the same time.

 

Season the eggs with salt and pepper. Let the eggs cook for at least 4 minutes, or longer depending on how hard you want the yolk.

 

Cut the steak into 4 pieces and serve each piece with 2 eggs.
