Vegetable Omelet

SERVES: 1

 

INGREDIENTS:

2 eggs

3 tablespoons milk

Salt and pepper to taste

3 tablespoons butter

1/4 cup green pepper and red pepper, diced

4 mushrooms, sliced

 

INSTRUCTIONS:

 

In a bowl, whisk the eggs, salt, pepper and milk, until fluffy. Heat a skillet over medium-low heat. Add the butter. When the butter starts to sizzle add the peppers and mushrooms and sauté for 5 minutes. Reserve on a plate.

 

Pour the egg mixture to the skillet. Let the eggs cook until they start to get firm.

 

Add the vegetables to half of the omelet. Lift the other half of the omelet and fold it over the part with the cheese.

 

Let it cook until fully set, but not brown. Then serve.
