Western Omelet

SERVES: 1

 

INGREDIENTS:

2 eggs

3 tablespoons milk

Salt and pepper to taste

3 tablespoons butter

3 tablespoons diced green pepper

3 tablespoons diced red pepper

3 tablespoons diced ham

3 tablespoons diced onion

 

INSTRUCTIONS:

 

In a bowl, whisk the eggs, salt, pepper and milk, until fluffy. Heat a skillet over medium-low heat. Add the butter.

 

When the butter starts to sizzle pour in the red pepper, green pepper and onion. Cook for about 3 minutes until vegetables are soft.

 

Add the ham and cook for 2 more minutes. Then add the whipped eggs. Let the eggs cook until they start to get firm. Lift half of the omelet and fold it over the other half of the omelet.

 

Let it cook until fully set, but not brown. Then serve.
