Lemon Chicken (Chicken Francaise)

This dish goes great with hot cooked white rice or steamed vegetables.

 

SERVINGS: 4

 

INGREDIENTS:


4 boneless, skinless chicken breast halves



1/4 teaspoon pepper



1/2 teaspoon salt

1 egg beaten



5 tablespoons All-purpose flour



3 tablespoons butter or margarine



5 tablespoons of fresh lemon juice



1 cup chicken broth



4 lemon slices (optional)

 

INSTRUCTIONS:

 

Season the chicken with salt and pepper to taste.

 

Dip chicken in egg, then in flour.

 

In 12” skillet, brown the chicken in butter.

 

Mix lemon juice with chicken broth then add to skillet.

 

Place slices of lemon on top of chicken.

 

Bring to boil.

 

Then lower heat to a simmer, cover the skillet and cook 10 minutes more or until chicken is done.

 

Serve immediately.
