7-Up Cake

I didn’t even know this recipe existed until I saw it one of my friend’s status updates on Facebook. I went and looked up the recipe. I can’t wait til I try this dish out.

 

Has anyone made this before? What did you think? Do you recommend this dish?

 

SERVES: 6

 

INGREDIENTS:

3 cups of sugar

1/2 cup shortening

1 cup margarine

5 eggs

3 cups flour

2 tablespoons lemon extract

1 cup 7UP (room temperature)

1/2 cup confectioner’s sugar (optional)

 

INSTRUCTIONS:

 

Prepare a 12-cup Bundt pan by greasing it and lightly flour. Preheat oven to 325F degrees.

 

In a large bowl beat the sugar, shortening and margarine until creamy. Add the eggs, one at a time, blending well. Add the flour, lemon extract and 7-Up soda. Mix well.

 

Pour the batter into pan and bake at 325F degrees for 1 to 1 ½ hours.

 

Let cake cool for 2 hours before serving. Just before serving lightly dust the top with confectioner’s sugar (optional).

 

Serve with an iced glass of 7-Up.
