Quick and Easy Cheesecake

 

SERVES: 6

 

INGREDIENTS:

24 large graham crackers

6 tablespoons melted butter

1/4 cup sugar

6 ounces cream cheese, softened

1 can (14 oz.) condensed milk

1 egg

3 tablespoons lemon juice

1 teaspoon vanilla extract

 

INSTRUCTIONS:

 

Heat the oven to 350F degrees. Place the graham crackers in a sealed plastic bag. Use a rolling pin to crush the crackers into crumbs.

 

Pour the crumbs into a bowl. Add the butter and sugar. Blend together with your hands then pour into the pie pan. Use your hands to press the crumbs evenly to the bottom and sides of the pie pan. Bake the pie crust for 8 minutes.

 

In a bowl, with a mixer, beat the cream cheese and milk until smooth. Add the egg, lemon juice and vanilla. Mix well.

 

Pour into pie pan that already has the graham cracker crust. Bake for 30 to 35 minutes or until center of cheesecake is almost set.

 

Cool. Chill in the refrigerator for at least 2 hours then serve.
