Quick and Easy Pumpkin Pie

SERVES: 6

 

INGREDIENTS:

24 large graham crackers

6 tablespoons melted butter

1/4 cup sugar

1 can (15 oz.) pumpkin

1 can (14 oz.) condensed milk

2 eggs

1/2 teaspoon salt

1/2 teaspoon ginger

1 teaspoon cinnamon

1/2 teaspoon nutmeg

 

INSTRUCTIONS:

 

Heat the oven to 350F degrees.

 

Place the graham crackers in a sealed plastic bag. Use a rolling pin to crush the crackers into crumbs. Pour the crumbs into a bowl.

 

Add the butter and sugar. Blend together with your hands then pour into the pie pan. Use your hands to press the crumbs evenly to the bottom and sides of the pie pan.

 

Bake the pie crust for 8 minutes at 350F degrees. Then remove from oven.

 

Heat the oven to 425F degrees.

 

In a bowl, with a mixer, beat the pumpkin, milk, eggs, salt, ginger, cinnamon, and nutmeg. Pour into pie pan that already has the graham cracker crust. Bake for 15 minutes.

 

Then reduce the oven temperature to 350F degrees. Bake at 350F degrees for 35 to 40 minutes until knife inserted 1 inch from crust comes out clean. Cool.

 

Serve alone or with ice cream or with whipped cream
