Mushroom Pasta with Seafood

 

SERVES: 4

 

INGREDIENTS:

1 box (16 ounces) pasta

6 tablespoons butter

2 tablespoons garlic powder

16 ounces sliced mushrooms

2 pounds bay scallops, cleaned

1 pound medium shrimp, peeled and cleaned

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup light cream

1/2 cup grated parmesan cheese

 

INSTRUCTIONS:

 

In a skillet at medium heat, melt the butter. Then add the garlic and mushrooms. Cook until the mushrooms are golden brown then add the scallops and shrimp. Stir constantly for about 5 minutes.

 

Meanwhile, in a large pot with boiling water cook the pasta according to directions on the box. Drain the pasta then put it back into the pot. At low heat add the salt, pepper, cream and parmesan cheese and stir to coat the pasta.

 

Add the mushroom mixture from the skillet to the pot and cook for 2 more minutes. Serve hot.
