Scallops and Shrimp Wine Sauce


1 ½ cup white wine

½ cup clam juice

1 bay leaf

1 lb. Scallops (cleaned and ready for cooking)

1 lb. Shrimp (cleaned and ready for cooking)

¼ cup chopped onion

3 tablespoons butter

¼ cup flour

½ teaspoon salt

1 cup milk or light cream




Combine wine, clam juice and bay leaf in large sauce pan. Bring to boil. Add shrimp and scallops. Bring to boil and simmer for 3 minutes. Remove from heat. Drain and reserve the liquid.


In skillet over medium heat, sauté the onions in butter until tender but not brown. Stir in four and salt until mixture is smooth. Gradually stir in the reserved cooking liquid. Keep stirring until thick and with bubbles. Lower heat and simmer for 5 minutes.


Add milk, shrimp and scallops to skillet. Use low heat to heat through, for about 1 minute. Serve over hot cooked rice.
