Shrimp Fettuccine with Alfredo Sauce

 

SERVINGS: 4 to 6

 

INGREDIENTS:

8 ounces fettuccine

2 tablespoons butter

¾ cup half-and-half

1 teaspoon grated lemon zest

Juice from 1 large lemon

1 lb. Shrimp (cleaned and ready for cooking)

¼ teaspoon pepper

½ teaspoon salt

½ grated Parmesan cheese

 

INSTRUCTIONS:

 

Bring large pan of salted water to a boil. Add fettuccine and cook until al dente.

 

Meanwhile, combine butter and half-and-half in skillet. Bring to a boil. Boil about 3 minutes, stirring constantly. Reduce heat. Stir in lemon zest, lemon juice and shrimp. Simmer until shrimp are opaque, 3 to 5 minutes. Drain the pasta and place in large bowl. Pour hot shrimp sauce over top.

 

Sprinkle with Parmesan cheese, salt and pepper. Toss quickly to coat noodles with sauce. Then serve on individual plates, evenly distributing the shrimp. Serve immediately.
