Cheesy Broccoli Casserole

 

SERVES: 6

 

INGREDIENTS:

1 cup onion, sliced into rings

2 tablespoons butter

4 cups broccoli florets, sliced

1 cup mushrooms, sliced

1 cup milk

1 teaspoon salt

1/8 teaspoon black pepper

1 cup shredded cheddar cheese

 

INSTRUCTIONS:

 

In a skillet, heat the butter. Over medium-low heat, cook the onion for about 25 minutes, stirring often, until the onion is caramel color.

 

In large pot bring 2 quarts of water to a boil. Add the broccoli and mushrooms. Cook for about 5 minutes. The vegetables should be tender but not soft.

 

In a large casserole dish, mix the broccoli, milk, mushrooms, salt and pepper. Stir in half of the caramelized onions and 1/2 cup of the cheddar cheese.

 

Cover the dish and bake in the oven set to 350F degrees for 20 minutes. Then stir the vegetable mixture, add the remaining onions and cheese on top and bake for 10 minutes, uncovered.

 

Let the casserole stand 10 minutes before serving.
