Crunchy Green Bean Casserole

 

SERVES: 6

 

INGREDIENTS:

1 cup onion, sliced into rings

2 tablespoons butter

4 cups green beans, sliced

1 cup mushrooms, sliced

1 cup milk 2 slices bacon, cooked and crumbled

1/2 cup red pepper, chopped

1 teaspoon salt

1/8 teaspoon black pepper

2 tablespoons butter

1/2 cup sliced almonds

 

INSTRUCTIONS:

 

In a skillet, heat the butter. Over medium-low heat, cook the onion for about 25 minutes, stirring often, until the onion is caramel color.

 

In a large pot bring 2 quarts of water to a boil. Add the green beans and mushrooms. Cook for about 5 minutes. The vegetables should be tender but not soft.

 

In a large casserole dish, mix the green beans, milk, bacon, mushrooms, red pepper, salt and pepper. Stir in half of the caramelized onions.

 

Cover the dish and bake in the oven set to 350F degrees for 20 minutes.

 

In a skillet, heat the butter. Over medium-low heat, cook the almonds for 5 minutes, stirring frequently.

 

Remove the casserole dish from the oven. Stir the green beans mixture. On top add the remaining onions and the toasted almonds. Bake for 5 minutes, uncovered.

 

Let the casserole stand 10 minutes before serving.
