Crunchy Mashed Potatoes

5 large potatoes cut into 1-inch pieces (with or without the skin)

2 tablespoons butter

1/2 cup light cream

1 teaspoon salt

1/8 teaspoon black pepper

3 slices bacon, cooked and crumbled

1/2 cup sour cream

4 tablespoons fresh chives, chopped




In large pot bring 2 quarts of water to a boil. Add the potatoes and lower the heat and cover. Cook for 15 minutes until potatoes are tender and soft. Drain.


Place the potatoes in a bowl and mash them with a fork or masher. Add the butter, salt and pepper. Mash again.


Heat the cream to make it hot but do not boil. Add the cream, bacon, sour cream and chives to the bowl and stir.


Serve immediately.
