Garlic Mashed Potatoes

SERVES: 6

 

INGREDIENTS:

5 large potatoes cut into 1-inch pieces (with or without the skin)

4 cloves of garlic

2 tablespoons butter

1/2 cup light cream

1 teaspoon salt

1/8 teaspoon black pepper

2 teaspoons garlic powder

 

INSTRUCTIONS:

 

In large pot bring 2 quarts of water to a boil. Add the potatoes and garlic. Lower the heat and cover the pot. Cook for 15 minutes until potatoes are tender and soft. Drain. Remove the garlic cloves.

 

Place the potatoes in a bowl and mash them with a fork or masher. Add the butter, salt and pepper. Mash again.

 

Heat the cream to make it hot but do not boil. Add the cream and garlic powder to the bowl and stir.

 

Serve immediately.
