Spanish Yellow Rice

 

SERVES: 12 muffins

 

INGREDIENTS:

2 tablespoons olive oil

2 teaspoons garlic powder

1/2 teaspoon salt or to taste

2 teaspoons garlic powder

2 cups of water

1 cup extra-long-grain white rice

1 teaspoon saffron threads

 

INSTRUCTIONS:

 

In a large saucepan, over high heat, mix all of the ingredients. Bring to a boil. Cover the saucepan with a tight fitting lid and reduce the heat to a medium simmer.

 

Cook for about 20 minutes. Do not stir. During the last couple of minutes of cooking, take off the lid. Then stir, cover with lid and turn off heat.

 

Let it rest for a couple of minutes then serve.
