Easy Risotto

2 tablespoons olive oil

1 small onion, chopped

Salt and pepper, to taste

1 cup long grain rice

1/2 cup dry white wine

4 cups (2 cans) reduced-sodium chicken broth

1/2 cup water

1/2 cup grated Pecorino or Parmesan cheese

2 tablespoons butter




In a medium saucepan, add the oil and heat it medium heat.


Add onion, salt and pepper, and cook until soft, about 5 minutes.


Add the rice and cook, stirring frequently, for 2 minutes.


Add wine and cook, stirring until absorbed, about 2 minutes.


In a small saucepan, heat chicken broth with 1/2 cup water.


Bring to a boil, and then reduce heat to a simmer.


Add 2 cups of broth to rice mixture.


Cook for about 10 minutes while stirring every couple of minutes, until broth is absorbed by the rice.


Continue adding broth, 1 cup at a time, cooking and stirring until most of the broth has been absorbed (about 20 to 30 minutes).


The rice will be tender yet firm.
