Noodles in Peanut Sauce

 

These noodles go great with spring rolls. What do you prefer to pair these noodles with? Any recommendations? 

 

SERVES: 2

 

INGREDIENTS:

5 ounces Chinese noodles (or any type of thin pasta like angel hair, spaghetti, enough for two people)

3 1/2 tablespoons sesame oil

3 tablespoons peanut butter

1 1/2 tablespoons soy sauce

1 1/2 tablespoons rice wine vinegar

2 teaspoons sugar

1 tablespoon water

INSTRUCTIONS:

 

In a large pot of boiling water, cook the noodles or pasta, until almost tender. Drain the noodles and place in a bowl. Toss the noodles with 1/2 tablespoon of the sesame oil to prevent sticking.

 

In a pot over low heat, mix the remaining sesame oil into the peanut butter. Blend in soy sauce, rice wine vinegar, sugar and water.

 

Spoon the peanut mixture over the noodles. Toss the noodles to coat well. Serve immediately if you want to serve it hot. If you want to serve it cold then refrigerate it for 2 hours before serving.
