Easy and Quick Vegetable Soup

 

SERVES: 4 to 6

 

INGREDIENTS:

3 cups water (or vegetable broth)

1 teaspoon salt

½ teaspoon pepper

1 bay leaf

1/8 teaspoon basil

28 ounces tomatoes (1 large can)

1/3 cup chopped onion

1 cup cubed potatoes

1 cup celery, thinly diced

1 cup carrots, thinly diced

1 cup chopped green beans

 

INSTRUCTIONS:

 

In a large saucepan, stir in all of the ingredients. Bring to a boil while stirring.

 

Then reduce the heat and cook covered for 20 minutes until vegetables are tender. Serve hot.
