Quick and Easy Turkey Chili

 

SERVES: 6

 

INGREDIENTS:

2 pounds ground turkey

1/2 cup chopped onion

2 tablespoons chili powder

1/2 teaspoon ground cumin

1/2 cup chopped green pepper

1 can of diced tomatoes

1 small can tomato paste

1 cup water

2 cans (about 15 ounces each can) red kidney beans, rinsed and drained

 

INSTRUCTIONS:

 

In a large saucepan, over medium heat, cook the turkey with the onion, chili powder and cumin. Cook until the turkey is browned, while stirring often.

 

In a bowl mix the tomatoes, tomato paste and water. Add the pepper and beans, mix well. Pour the tomato mixture into the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the vegetables are tender.

 

Serve with a slice of bread.
