Baked Beans Boston Style

 

SERVES: 6

 

INGREDIENTS:

1/ 4 cup water

1 teaspoon ground ginger

1/3 cup molasses

2 tablespoons brown sugar

4 cups navy beans, canned

1 teaspoon dry mustard

1 teaspoon salt

1 tablespoon safflower oil (or any vegetable oil)

1 large onion, sliced into rings

 

INSTRUCTIONS:

 

Preheat oven to 350F degrees.

 

Combine all the ingredients except the onion and the oil.

 

Pour the mixture into a 1 ½ quart baking dish.

 

Cover the dish and bake 30 minutes.

 

Heat the oil in a skillet.

 

When oil is hot, add the onion and saute until light brown.

 

After the beans have baked for 30 minutes, top with onions and bake, uncovered, for another 10 minutes.

 

Serve immediately.
