This French Toast is extra sweet with two added slices of cheese. Kids will eat this dish right up and request seconds… maybe even thirds.

 

SERVES: 2

 

INGREDIENTS:

1 egg

1/4 cup milk dash of vanilla extract

1 tablespoon margarine or butter

2 slices of cheese

4 pieces of bread

 

INSTRUCTIONS:

 

In a bowl combine beat the egg, milk and vanilla.

 

Heat a frying pan to medium-low heat. Add the margarine or butter to coat the pan.

Pumpkin Muffins

 

SERVES: 12

 

INGREDIENTS:

1/3 cup golden raisins

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

3/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1 teaspoon ground cinnamon

1 stick unsalted butter, melted and cooled

3/4 cup packed light brown sugar

3/4 cup canned pure pumpkin

1/4 cup well-shaken buttermilk

2 large eggs

1 teaspoon pure vanilla extract

3 tablespoons raw green (hulled) pumpkin seeds (pepitas), divided

 

INSTRUCTIONS:

 

Preheat oven to 400°F.

 

Butter 12 muffin cup pan if not nonstick.
