Albondigas is the Spanish term for meatballs. This is a great dish, and kid friendly. Serve with white rice, and you have a complete meal that everyone at the table will love.

 

SERVES: 4

 

INGREDIENTS:

1 pound ground beef

1/4 cup saltine cracker crumbs

1 large egg, slightly beaten

2 tablespoons chopped fresh cilantro

2 tablespoons water

1 can tomato sauce

2 tablespoons chopped chipotle peppers in adobo sauce

Hot cooked rice

Chopped fresh cilantro (optional)

 

INSTRUCTIONS:

 

Mix lightly ground beef, cracker crumbs, egg, 2 tablespoons cilantro and water in large bowl.

 

Shape 12 equal portions of beef mixture into meatballs.

Baked Italian Meatballs

This is a classic dish that never goes out of style. It is best served with pasta such as spaghetti to make the classic “spaghetti with meatballs”. You can also serve on Italian bread. Both require adding pasta sauce.

 

SERVES: 4

 

INGREDIENTS:

1 pound ground beef (90% to 95% lean)

1/4 cup seasoned dry bread crumbs

1 egg

2 tablespoons water

1 teaspoon minced garlic

1/2 teaspoon salt

1/8 teaspoon pepper

1 jar (14-1/2 ounces) pasta sauce, heated

 

INSTRUCTIONS:

 

Pre-heat oven to 400°F.

 

Mix in a large bowl ground beef, bread crumbs, egg, water, garlic, salt and pepper thoroughly.
