Chicken and Vegetable Stir Fry

 

I have made this dish so many times. It is one of my personal favorite.  What do you think? Do you find this dish kid friendly, as well as tasty and delicious?

 

SERVES: 4

 

INGREDIENTS:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1 tablespoon minced fresh ginger, or 2 teaspoons ground ginger

2 tablespoons corn starch

1/2 cup chicken broth

2 teaspoons dark sesame oil

2 tablespoons soy sauce

2 tablespoons vegetable oil

1 cup sliced mushrooms

1 cup sliced snow peas

W small red pepper, cut in thin strips

4 green onions, cut into 1-inch pieces

 

INSTRUCTIONS:

 

In a large bowl, mix chicken, ginger, and 1 tablespoon corn starch. In a separate bowl, mix 1 tablespoon corn starch, broth, sesame oil, and soy sauce.

 

In a large skillet, or wok, heat the vegetable oil over medium-high heat. Add the chicken, stirring frequently, for about 3 minutes. Add the vegetables and continue cooking, stirring frequently for 5 minutes.

 

Stir in the soy sauce mixture, stirring constantly and bring to a boil. Boil for 1 minute then serve. This goes great with white rice.
